Carbonara vs. Lasagna Roll-Ups

Carbonara
12 oz Fettuccine Pasta
10 oz Baby Spinach Leaves
12 Strips Bacon
1/2 Small Diced Red onion
4 Garlic Cloves
2 eggs
1 cup Parmesan Cheese
Parsley, Basil, Garlic Salt, Black Pepper

 - Recipe -
Whisk eggs and cheese together in a small bowl
Boil pasta in a large pot
Fry bacon, but do not drain grease when done
Dry Cooked Bacon pieces with a paper towel
Chop Bacon finely
Saute Chopped Onions and Minced Garlic in Bacon Grease
Cook until Onions are soft
Add drained pasta to grease and toss with tongs
Add spinach and toss until spinach is cooked
Add egg & cheese sauce on top
Toss until cheese is melted
Top with bacon and seasonings

  • Use whole grain pasta or brown rice pasta to ensure you are receiving nutrients from your pasta
  • Use Turkey Bacon to cut calories and fat
  • Drain Bacon Grease and substitute with chicken broth or olive oil instead
    • Extra Virgin Olive Oil is an unsaturated fat
  • Use Deli cheese, not pre-shredded cheese
    • Pre-shredded cheese contains preservative in order to allow for a longer shelf life
    • Preservatives are not natural and are usually chemicals that you cannot pronounce

Lasagna Roll-ups
On the lighter side:
16 whole grain Lasagna Noodles
10 oz Spinach Leaves
Ricotta Cheese
Tomato Basil Sauce
1 pound ground Italian sausage
Soft Mozzarella Cheese
Garlic powder, basil leaves, black pepper

-Recipe-
Boil Lasgagna Noodles
Preheat oven to 350 degrees
Brown Italian Sausage w/ seasonings
Lay Lasgagna noodles on a large cutting board
Add spoonfuls of ricotta cheese and spread across
Sprinkle on Cooked Italian Sausage
Spoon small amounts of sauce
Add leaves on top
Roll up into a burrito and repeat
Lay roll-ups in pan
Pour remaining sauce on top
Lay slices of soft Monzerella on top
Sprinkle with basil
Bake for 20 minutes in oven

3 Good Choices:
  • Adding lots of vegetables and fruit is always a good choice, load the sauce with onions and tomatoes, but that extra spinach is going to fuel your body with vitamins
  • Using whole grain noodles ensures your body with rich whole grains instead of a carb that offers no nutrients
  • Fresh slices of soft Monzerella from the deli does not contain the amount of preservatives that are in a bag of shredded cheese at the store. The cheese is truly fresh and good for you

I am not going to lie to you, but carbonara is not the best thing for your body for sure. But any dish can become healthier or a completely fueling lean dish if you are able to make the right choices and include your own substitutions. It is more important to nourish your body with all vitamins and food groups, than to eat a plain lean dish that doesn't have much to offer. So go ahead and eat the comfort food of carbonara and bacon once in a while, but try organic versions of it. But try a lighter dish for lunch, or the next day. It is all about balance and moderation.
