Fried Chicken vs. Creamy Chicken

 Fried Chicken
Chicken Thighs or Legs
Flour, Eggs, Breadcrumbs
BBQ seasoning, Garlic Powder, 
Onion Powder, Black Pepper, Paprika
Oil
-Recipe-
Preheat oven to convection roast (325 degrees)
Add seasonings to flour and mix
Add a few oz. of water to eggs and whisk in a bowl
Lay Panko on a large plate
Coat chicken in flour
Dip chicken in eggs wash
Coat chicken in breadcrumbs
Lay chicken thighs on baking sheet
Drizzle oil on baking sheet
Bake in oven for 45 minutes to an hour
Flip chicken every 15 minutes

Served with Mashed Potatoes
Healthy Alterations: #fixthedish
  • Use eggs whites instead of whole eggs in the egg wash to cut calories
  • Use Panko instead of breadcrumbs. Panko is a product that contains few ingredients and are not crazy chemical names that you can't pronounce.
  • Use extra virgin olive oil because it is an unsaturated fat that is healthy for you such as Omega 3.
  • Use whole wheat flour and whole wheat breading to ensure your body servings of whole grain.

Creamy Chicken
On the lighter side:
Chicken Tenderloin
Whole Wheat Flour
Basil, Oregano, Thyme
Sage, Black Pepper, Seasoning Salt
Roma Tomatoes
Soft Mozzarella Cheese

- Recipe -
Preheat Oven to 325 degrees (convection roast)
Mix in seasonings to a plate of flour
Coat Chicken in flour
Place Chicken Tenderloins in ceramic or glass pan (w/ lid)
Pour Sauce over the chicken
Wash and cut tomatoes into slices
Lay tomato slices on top of Chicken
Sprinkle Basil over tomatoes and chicken
Top with slices of soft mozzarella cheese
Bake with a lid for half an hour

Served with mixed vegetables and herb rice

  • Chicken is always a good choice for protein because it is white meat. White meat is a leaner source of protein that contains less fat, but it has the nutrients and amino acids your body needs.
  • Topping with Roma Tomatoes adds a serving to fruit to your dish to allow your body to experience multiple food groups. Not to mention the fantastic taste of those oven roasted tomatoes!
  • Whole wheat flour is a nice touch to the chicken to add some carbohydrates to your meal that do provide your body with whole grain, which contains nutrients and whole grain makes the nutrients stay in your body longer.
This weekend I wanted to make chicken into something special for my family. I remember as a kid eating Kentucky Fried Chicken on a Friday night, but I decided that I wanted to make own, and I knew that would be healthier.A good tasty breading baked to perfection that everyone in my family loved more than any fast food restaurant! Yum! I also happened to have leftover Alfredo sauce from when I cooked Chicken Alfredo, and I honestly just didn't want to waste it. After all, I actually ending up making a delicious dinner that everyone found quite exciting. Leftovers can be something amazing if you get creative with food, after all, food is an art!
