Fried Chicken vs. Creamy Chicken

 Fried Chicken
Chicken Thighs or Legs
Flour, Eggs, Breadcrumbs
BBQ seasoning, Garlic Powder, 
Onion Powder, Black Pepper, Paprika
Oil
-Recipe-
Preheat oven to convection roast (325 degrees)
Add seasonings to flour and mix
Add a few oz. of water to eggs and whisk in a bowl
Lay Panko on a large plate
Coat chicken in flour
Dip chicken in eggs wash
Coat chicken in breadcrumbs
Lay chicken thighs on baking sheet
Drizzle oil on baking sheet
Bake in oven for 45 minutes to an hour
Flip chicken every 15 minutes

  • Use eggs whites instead of whole eggs in the egg wash to cut calories
  • Use Panko instead of breadcrumbs. Panko is a product that contains few ingredients and are not crazy chemical names that you can't pronounce.
  • Use extra virgin olive oil because it is an unsaturated fat that is healthy for you such as Omega 3.
  • Use whole wheat flour and whole wheat breading to ensure your body servings of whole grain.

Creamy Chicken
On the lighter side:
Chicken Tenderloin
Whole Wheat Flour
Basil, Oregano, Thyme
Sage, Black Pepper, Seasoning Salt
Roma Tomatoes
Soft Mozzarella Cheese

- Recipe -
Preheat Oven to 325 degrees (convection roast)
Mix in seasonings to a plate of flour
Coat Chicken in flour
Place Chicken Tenderloins in ceramic or glass pan (w/ lid)
Pour Sauce over the chicken
Wash and cut tomatoes into slices
Lay tomato slices on top of Chicken
Sprinkle Basil over tomatoes and chicken
Top with slices of soft mozzarella cheese
Bake with a lid for half an hour

  • Chicken is always a good choice for protein because it is white meat. White meat is a leaner source of protein that contains less fat, but it has the nutrients and amino acids your body needs.
  • Topping with Roma Tomatoes adds a serving to fruit to your dish to allow your body to experience multiple food groups. Not to mention the fantastic taste of those oven roasted tomatoes!
  • Whole wheat flour is a nice touch to the chicken to add some carbohydrates to your meal that do provide your body with whole grain, which contains nutrients and whole grain makes the nutrients stay in your body longer.
This weekend I wanted to make chicken into something special for my family. I remember as a kid eating Kentucky Fried Chicken on a Friday night, but I decided that I wanted to make own, and I knew that would be healthier.A good tasty breading baked to perfection that everyone in my family loved more than any fast food restaurant! Yum! I also happened to have leftover Alfredo sauce from when I cooked Chicken Alfredo, and I honestly just didn't want to waste it. After all, I actually ending up making a delicious dinner that everyone found quite exciting. Leftovers can be something amazing if you get creative with food, after all, food is an art!

Pasta Bake vs. Chicken Alfredo

Pasta Bake
Bow Tie Pasta
Italian Sausage
1/2 cup Cream
Green Pepper, Onion, Red Pepper
Tomatoes, Garlic, Basil leaves
Italian Seasoning Blend
Shredded Mozzarella Cheese
-Recipe-
Preheat oven to 350 degrees
Boil pasta until tender
Brown Italian Sausage in seasoning blend
Wash and dice all the vegetables
Saute Onions and garlic for 5 minutes
Add peppers for another 5 minutes
Add tomatoes and basil leaves for 5 minutes
Add 1/2 a cup to cooked sauce and stir
Drain pasta and put in a casserole pan
Drain grease from meat and lay meat on top of pasta
Add vegetable mixture on top of the meat
Pour sauce over everything
Sprinkle with extra seasonings and cheese on top (optional)
Bake for twenty minutes

Whole grain fettuccine Pasta
 2 cups Silk or Almond Milk
(Silk milk isn't as sugary)
1/2 cup unsalted butter
1 cup shredded Asiago Cheese
Black Pepper, Salt, Parsley

Boil Pasta until tender
Heat milk on medium heat in a saucepan
Add butter and whisk until butter is melted
Add cheese and whisk until thick
Add seasonings to desired taste
Serve pasta with Chicken and extra Cheese

  • Using a whole grain pasta provides your body with essential nutrients that would be lacked in a white grain pasta
  • The Almond milk is low calorie and does not contain the lactose sugar in a normal milk, and contains less fat than cream. And the unsalted cream butter is natural for your body and provides calcium, and it is not a fake butter produced out of chemicals in a laboratory
  • Serving with chicken breast is a smart lean meat that ensures your body with protein

These two are some of my favorite pasta dishes! The pasta bake is actually my favorite sauce. I order it at any restaurant that I can, and make it myself every dance I get. I love the casserole taste that the pasta bake has, and it makes the pasta have so much more flavor and texture. I actually make the sauce using garden fresh basil, peppers, and tomatoes. I actually had a good garden season this year that allowed me to make food using my own fruits and vegetables. I encourage you to try a small garden next year, or try making sauces from scratch instead of using a jar. The sauce actually doesn't take me as long as I would think. It takes me less time than boiling noodles, and home-made sauce allows me to customize to my own liking.

Cheesy Garlic Bread vs. Bruchetta

Cheesy Garlic Bread
French Bread
Olive Oil
Parmesan Cheese

Slice French Bread
Drizzle Olive Oil on bread
Mince Garlic Cloves and sprinkle on top of bread
Sprinkle shredded cheese on top
Add minced Basil on top of cheese
Bake at 350 degrees for 10 minutes

  • Use deli cheese over pre-shredded cheese
    • Pre-shredded cheese contains preservatives to allow for a longer shelf life, which can be harmful chemicals

    • Extra Virgin Olive Oil contains unsaturated fats, which are good fats for your body such as Omega-3 which is helps muscle growth.
  • Use natural or organic garlic and basil
    • My Basil is garden fresh, and garden vegetables/spices contain more nutrients than a canned or packages spice/vegetable. I've actually found that fresh spices have more flavor, but that is my opinion.

Cut French Bread into slices

  • Extra Virgin Olive Oil is always a good choice because it contains fats that are good for your body and can actually help with muscle growth! They are unsaturated fats such as Omega 3.
  • Using garden fresh vegetables is also a good choice, I used tomatoes and basil from my own garden in the backyard and I encourage you to try that next year as well. But always try for natural and organic vegetables at the supermarket, they contain more nutrients than a vegetable in a can.
  • The dish overall is a fantastic choice for a side dish or appetizer to add some fruit to your meal! A lot of people are loading their plates with protein, but it's always a good idea to expose yourself to all food groups as well.
I, for one, do not have time to make my own bread, but I do go to a local bakery to buy fresh bread instead of shelf bread. I love recipes like bruchetta because it allows me to make the dish my own. Even though I didn't make the bread myself, I love serving a platter of bruchetta in the center of the kitchen table, and it feels like we're eating a restaurant. I love adding my own garden food to spice things up and make a dinner into something really special for my family and I. Cheesy garlic bread tastes great too, but it's nice to have both options to mix up the dinners as well.

Smoked Pork Chops

Coat in flour, soak in egg wash, coat in panko crumbs

  • There is an abudance of protein in this pork chop, which is good to assure your body, but try servings with lots of vegetables and fruit to allow your body those nutrients as well.
A little something about myself is that I hate pork! And I'm from Iowa, the pork state! How ironic, right? Well, when I am able to serve it with lemon, tomatoes, and a good breading, it makes the dish a little better in my eyes with a bit of juicy fruit. I loved mixing it up with two different pork chops this week and allowing myself to choose which one I liked better. Although the plain chop is better for you, I loved the Crusted Smoked Pork! Carbonara vs. Lasagna Roll-Ups

Carbonara
12 oz Fettuccine Pasta
10 oz Baby Spinach Leaves
12 Strips Bacon
1/2 Small Diced Red onion
4 Garlic Cloves
2 eggs
1 cup Parmesan Cheese
Parsley, Basil, Garlic Salt, Black Pepper

 - Recipe -
Whisk eggs and cheese together in a small bowl
Boil pasta in a large pot
Fry bacon, but do not drain grease when done
Dry Cooked Bacon pieces with a paper towel
Chop Bacon finely
Saute Chopped Onions and Minced Garlic in Bacon Grease
Cook until Onions are soft
Add drained pasta to grease and toss with tongs
Add spinach and toss until spinach is cooked
Add egg & cheese sauce on top
Toss until cheese is melted
Top with bacon and seasonings

Boil Lasgagna Noodles
Preheat oven to 350 degrees
Brown Italian Sausage w/ seasonings
Lay Lasgagna noodles on a large cutting board
Add spoonfuls of ricotta cheese and spread across
Sprinkle on Cooked Italian Sausage
Spoon small amounts of sauce
Add leaves on top
Roll up into a burrito and repeat
Lay roll-ups in pan
Pour remaining sauce on top
Lay slices of soft Monzerella on top
Sprinkle with basil
Bake for 20 minutes in oven

  • Adding lots of vegetables and fruit is always a good choice, load the sauce with onions and tomatoes, but that extra spinach is going to fuel your body with vitamins
  • Using whole grain noodles ensures your body with rich whole grains instead of a carb that offers no nutrients
  • Fresh slices of soft Monzerella from the deli does not contain the amount of preservatives that are in a bag of shredded cheese at the store. The cheese is truly fresh and good for you

I am not going to lie to you, but carbonara is not the best thing for your body for sure. But any dish can become healthier or a completely fueling lean dish if you are able to make the right choices and include your own substitutions. It is more important to nourish your body with all vitamins and food groups, than to eat a plain lean dish that doesn't have much to offer. So go ahead and eat the comfort food of carbonara and bacon once in a while, but try organic versions of it. But try a lighter dish for lunch, or the next day. It is all about balance and moderation.

Chicken Casserole vs. Grilled Chicken

Chicken Casserole
4 Chicken Breasts
4 Potatoes
4 Garlic Cloves
4 Tomatoes
1/2 Onion
1/2 Red Pepper, 1/2 Green Pepper
2 Celery Stalks
1 cup Green Beans
Chicken Broth, Milk
Flour
Shredded Colby Jack Cheese
2 Green Onion Stalks
Red pepper, Parsley, Black Pepper, Salt
- Recipe -
Wash and Chop all vegetables
Saute Vegetables together in a large pan
Cook until every vegetable is extremely soft
Saute Chicken separately in another pan w/ lid
Add 2 cups chicken broth to vegetables
Bring to boil
Add 1 cup of milk
Simmer after 5 minutes
Thicken with flour and cheese
Add diced chicken and stir until thick
Top with seasonings
Scoop with ladle into bowls
Add cheese and green onions as garnish

Set in gallon bag in fridge for two days

  • Grilling is a healthy alternative for cooking your food because it does not involve your meat or vegetables sitting in a puddle of oil. Simple drizzle or brush a little to allow a crisp outside to your food, but allow the fire to cook thoroughly through to the center.
  • Lemon Juice is a good substitution for wet marinades. The Lemon Juice allows you to use less oil on your dish, but gives tons of flavor packed into the liquid that allows your species to stick to the chicken.
  • Serving your dish with lots of vegetables is always a good choice. As you can see, I have half my plate as vegetables here, allowing my body to be fueled with all kinds of nutrients and vitamins. Sweet Potatoes contain potassium, calcium, riboflavin (all good things for your body), but I also have a mixture of vegetables on the side ensuring that my body is filled with every nutrient that it needs.
Chicken doesn't have to be a plain dinner, spice it up! Mix it up! I love making risottos/rice or casseroles with chicken to mix in some vegetables and fruit to create a new taste. However, grilled chicken is quite the tasty dinner at my house, especially if it is marinated ahead of time to pack flavor, but I'm still able to mix it up by trying different vegetables and throwing in a side of perhaps mashed potatoes. So, don't be afraid to try something new with your dish or as your main dish.

Spaghetti Pasta Bake vs. Turkey Fettuccine

Spaghetti Pasta Bake
Brown Rice Spaghetti Noodles
Tomato Sauce
Cottage Cheese
Mozzarella Cheese
Pizza Sauce
Ground Turkey
- Recipe -
Preheat oven
Boil water and cook the noodles
Blend cottage cheese in a blender

Cook ground turkey in a pan
Add tomato sauce to the cooked noodles and stir
Add in the blended cottage cheese and mix
Add to a square pan
Sprinkle a layer of mozzarella cheese over top
Cover with a light layer of pizza sauce

Boil water and cook the noodles
In medium saucepan, combine cheeses and milk
Stir until melted and combined, add flour
Add in your choice of herbs
Once noodles are cooked and drained, add to saucepan

Pasta can be nurtition if you lay low on the sodium, but throw in vegetables and fruit to not only make a better taste, but a healthier dish. My sister loves a good pasta dish before a soccer game or tournament to keep her energy going for a long time. Why not try a new pasta dish for a big race? Use a vegetable slicer in order to have potato slices

Place parchment paper on a large baking pan
One potato uses one large pan
Spray or bush olive oil on parchment paper
Lay potato slices on pan
Spray or brush tops of slices with olive oil
Bake until chips begin browning (10 minutes or so)
Sprinkle with salt and pepper and toss in a bowl when dry

  • Using a low calorie potato or an organic potato that does not contain pesticides. Red potatoes are less calories than a yellow potato, and organic potatoes do not contain harmful chemicals that are sprayed before entering your grocery store.
  • Use extra virgin olive oil, instead of canola oil. Extra Virgin Olive Oil is less calories and made out of vegetables. 
  • Baking potato chips is so much healthier than frying potato chips. There is such a small amount of oil brushed/sprayed on the chip vs. if the chips were laying in a pool of it and absorbing all of that oil.
Don't be afraid to eat starches or carbohydrates, they are good for you and give you lots of energy, however, there are plenty of ways to get your nutrients without loading them with unnecessary fats. Avoid the gravy and the fried chips. Try and make your own chips/mashed potatoes that could be something truly original and fond of your own taste. You will feel so much better by making quick healthy substitutions, instead of loading up on everything you know that you're not supposed to eat.

Corndogs Muffins vs. Blueberry Banana Muffins

Corn Dog Muffins


1 cup corn bread
1 cup yellow cornmeal
3 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup vegetable oil
1 large egg
- Recipe -
Preheat oven to 400 degrees
Place cupcake liners in cupcake pan
Combine dry ingredients in a large bowl and stir
Whisk wet ingredients together in a bowl and stir
Pour wet ingredients into dry ingredients, mix thoroughly
Add cut up hot dogs into mixture
Spoon hot dogs and mixture into cup cake liners
Bake for about twenty minutes

  • Use 2 egg whites instead of  1 whole egg
    • Egg whites contain fewer calories than the whole egg
  • Use organic sugar vs. Cane Sugar

  • Use skim milk to cut calories

  • Use of organic ingredients
    • Organic sugars aren't processed to be white cane sugar. You can also use a natural sweetener, such as agave nectar or honey.  Organic eggs, bananas and blueberries are more beneficial as well because they are used with less pesticides. 
  • Homemade muffins are great!
    • And might I say rewardingly delicious and nutritious as well? The packaged muffins you can buy from stores are very processed and have many preservatives in them to extend shelf life and maintain freshness. They are just cupcakes in disguise with no frosting!     
  • Whole wheat flour
    • Whole wheat flour has its original fiber that processed white flour doesn't contain
Often, muffins that you buy from the store off a shelf are incredibly unhealthy.  We are under the impression that muffins aren't bad for us, however that is incorrect. Packaged muffin mixes are not any better.   Homemade muffins, on the other hand, are much better for you.  And why not get creative when making your own muffins, such as Corndog Muffins!

Caramel Cake vs. Banana Bread

Caramel Cake

Cake:
1 cup butter
2 cups sugar
4 eggs
3 cups flour
1 cup milk
2 tbsp vanilla extract
Caramel:
1/2 cup butter
1 cup brown sugar
1/4 cup milk
2 tbsp vanilla extract
Frosting:
1/2 cup butter
3 cups powder sugar
1 tbsp vanilla extract
- Cake Recipe -
Preheat Oven to 350 degrees
Grease 2 (9 inch) pans and flour
Using a stand mixer or electric mixer
Cream butter and sugar
Add eggs one at a time, cream in between
Add flour and milk alternating in 3 batches
Cream in between batches, and add vanilla
Mix one final time before dividing batter into pans
Drop pans w/ batter on the counter from a few inches off the ground
Do so several times to remove air bubbles
Bake cakes for 20 minutes

- Caramel Recipe -
Cook brown sugar, milk, and butter in a pan
Cook over medium heat for 5 minutes
Remove from heat and add vanilla
After cake is cooked and cooled, inject caramel into layers

- Frosting Recipe -
Whip butter and sugar together
Add in cream and vanilla
Add to the top of the cake
Sides are optional
Top with nuts (optional)

Healthy Alterations: #fixthedish
  • Use unsalted natural cream butter
    • It contains calcium and is healthier for your body because it does not contain harmful ingredients and chemicals that are in "fake butter", which is made in a laboratory.
  • Use organic sugar
    • It is the most natural way for your body to process sugar, except for fruit. It is not as processed and refined as a cane sugar would be.
  • Use unbleached or whole wheat flour instead of white flour
    • Unbleached flour does not contain the chemicals used to bleach flour, and whole grain flour gives you servings of whole grains which people now a days are not always eating due to refined (white) grains, and whole grain is essential to your body and health


Banana Bread
On the lighter side:
1 cup organic sugar
1 stick unsalted butter
2 large eggs
3 ripe bananas
1 tbsp milk
1 tsp cinnamon
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
- Recipe -
Preheat oven to 325 degrees
Cream butter and sugar until fluffy
Use stand mixer or electric mixer
Add eggs to mixture one at a time
Beat mixture in between eggs
Add cut up bananas, milk, and cinnamon to mixture
Mix thoroughly until bananas are completely blended
Mix dry ingredients in a mixing bowl
Add dry ingredients to mixture
Mix just until flour is out of sight
Pour batter into a greased bread pan
Cook bread for an hour
Cool for 15 minutes
3 Good Choices:
  • Organic Sugar is so much more natural for your body simply because it is not refined. Refined foods have nutrients taken our of them and lead them to be processed, just as grains are processed and the whole grain servings are removed.
  • Use whole wheat flour simply to ensure your body is receiving all food groups and nutrients, you would not want to defy your body from one of the few needed nutrients. 
  • Use a natural cream butter instead of "fake butter", it is not made in a laboratory like fake butter is. It is natural calcium for your body and your body will process it easier. Not to mention that it does not contain sodium, which is also healthier for your body to process.
Don't be afraid to change up your grocery list and try some organic or healthy alterations. Go ahead and try whole grain anything, from flour to crackers. Try organic vegetables, organic meat and eggs, or organic sugar. Simply look for things that are not processed and are natural, because it makes a cake so much healthy. Processed, refined, and factory foods are harder on your stomach, and can mess up your metabolism.

Deep Dish vs. Thin Crust Pizza

Deep Dish
 Pizza Crust
Extra Virgin Olive Oil
Mozzarella Cheese
Pizza Sauce
Toppings
(Green Pepper, Onion, Garlic, Italian Sausage, Tomatoes, Mushrooms)
Sweet Basil, Oregano, Marjoram Leaf, Garlic, Red Pepper
- Instructions -
Use a whole grain crust or make your own with whole grain flour
Brush Pizza crust w/ extra virgin olive oil before cooking
Cook pizza crust for 10 minutes
Add cheese on crust
Brown Italian Sausage or choice of meat
Saute Vegetable and fruit toppings together w/ olive oil
Add topping on top of cheese
Add canned sauce or make your own
Top w/ seasonings
*Carbohydrates, Calcium, Protein, Vegetables, Fruit*

  • Always buy whole grains to ensure that your body is receiving whole grain
    • Buy whole grain flour or whole grain crust to ensure you are receiving the nutrients that you need
  • Try w/ Turkey Sausage vs. Red Meat
    • Turkey is easier on your intestines to process, and contains less calories
  • Use fresh cheese from the deli and shred it yourself
    • Pre-shredded cheese contains preservatives to give it a longer shelf life
    • I used fresh soft mozzarella and laid it in slices on my pizza

Thin Crust Pizza
On the lighter side:
Whole grain Pizza Crust
Extra Virgin Olive Oil
Natural Sea Salt Sauce
Fresh Deli Cheese
Toppings
(Green Pepper, Onion, Spinach, Tomatoes, Turkey Sausage)
Marjoram leaf, Sweet Basil, Oregano, Red Pepper
- Instructions -
Brush crust w/ olive oil
Bake pizza crust for 10 minutes ahead of time
Add sauce, then cheese
Saute meat ahead of time
Saute fruits and vegetables all together
Add topping on top w/ seasonings
*Vegetables, Fruit, Protein, Calcium, Carbohydrates*
3 Good Choices:
  • Whole Grain Crust ensures the nutrients your body needs to receive all the food groups, I cannot stress enough how important whole grain is.
  • Use a sauce that is made with natural sea salt or make your own. The natural sauce is rather organic, and contains fewer calories
  • I used turkey sausage instead of a red meat because it is easier on the human stomach and contains fewer calories
Pizza is stereotyped to be unhealthy, but if you make good choices and good substitutions, it is actually extremely healthy because you are fueling your body with all types of essential nutrients. Load your pizza with not just meat, but fruit and vegetables too. This gives your body every food group you need. Pizza can be delicious, but it doesn't have to be take out!
